Raspberry Cake – healthy and quick to make

Looking for something sweet, easy, healthy and quick to make? How about delicious and healthy raspberry cake? This is the favourite cake in our house at the moment. We love it as it is very easy and quick to make, perfect for any time of day.


  • 2 eggs
  • 4 tbsp coconut blossom sugar
  • 9 tbsp coconut oil
  • 12 tbsp full grain spelled flour
  • 12 tbsp oat milk
  • 10g baking powder
  • 400g frozen raspberries


  1. Mix eggs and 2 tbsp of coconut sugar. Add 9 tbsp of coconut oil and mix it. In the mixture add 12 tbsp of flour, 10g baking powder, 12 tbsp of oat milk and mix it. Pour the mix into the baking tray with greaseproof paper and bake it 15-20 minutes on 180°C or until it’s ready.
  2. Meanwhile, add frozen raspberries with 2 tbsp of coconut sugar into a pot on a heat. Stir it for a couple of minutes until all combined. At the end, you’ll get a smooth raspberry sauce.
  3. When the cake is baked pour the raspberry sauce over it and leave it to cool.
